Quorn chicken style curry

This is one of my favourite meals , it’s easy to make and it uses Quorn which is low in fat and high in protein.

You need
1 pack of quorn chicken style pieces
1 onion
1 thumb sized piece of ginger
1 tbsp ground coriander
1 tbsp ground cumin
2 tins chopped tomatoes ( value ones are just as good )
1/3 of a tin of coconut milk.
2 tbsp curry paste. I use pataks mild.

Ignore the tomato purée on the plate.
I was confused. It happens very easily.

In some hot olive oil cook the chopped onion and ginger until soft
Add the curry paste , cumin and coriander. ( I find that adding them before the tomatoes makes the onion more flavoury)
Then add the two tins of tomatoes !

If you have fussy kids who don’t like sauce with bits ( like mine ) chuck it in the blender till its smooth. Otherwise add the quorn pieces now.

After blending the sauce add the quorn pieces and then simmer for 15 minutes.

Add the coconut milk 5 minutes before its done.

Just before dishing up stir a handful of fresh coriander in to the curry and serve with rice and naan bread.

This makes enough for four people.
